2 tablespoons Blackening Rub
2 tablespoons unsalted butter
4 - 6 ounce white fish fillets, such as Catfish, Tilapia, Haddock, Flounder, Grouper
4 lemon wedges

1. In a shallow bowl or pie plate add the Blackening Rub. Dredge the fish in the rub on both sides.
2. In a cast iron skillet over medium-high heat, melt the butter and add the seasoned fish fillets. Cook 3 to 5 minutes on each side or until flaky.
3. Serve with a lemon wedge.
