I can be quite picky about caesar salad dressing and this recipe does just the trick. Loaded with flavor from roasted garlic, lemon, dijon mustard and parmesan cheese this dressing is sure to please. For this recipe you will need:
Allow garlic to soften in a tablespoon of hot water for 5-10 minutes. Remove from water, place on cutting board with a pinch of sea salt, and mince the garlic until fine. Mash the garlic into a paste with the flat side of the knife. Mix together the garlic, mustard, worcestershire, lemon, and anchovy paste in a small bowl. Stir in the mayonnaise then whisk in the olive oil slowly to incorporate fully. Mix in the cheese and season to taste with freshly ground black pepper. Serve with romaine lettuce, parmesan cheese, grilled chicken and croutons or foccacia bread. Best, Victoria
