1. In a mixing bowl beat together the cream cheese, sugar, vanilla and Apple Pie Spice until smooth and fluffy, set aside.
2. Use a paring knife or grapefruit spoon to hollow out the top of each strawberry to a depth of approximately 3/4 an inch.
3.Fill a pastry bag (or a zip top bag with the tip cut off) with the cream cheese mixture.
4. Fill each strawberry with the cream cheese mixture until just slightly above the tops. Place the strawberries on a large plate or platter as they are filled.
5. Add graham cracker crumbs to a plate or shallow bowl. Dip each top into the crumbs and place onto a serving platter or into mini cupcake liners.
