My eggplant parmesan recipe is easy to make, it satisfies my desire for a hearty meal (but is really healthy..shhh don't tell anyone) and simply sublime. I created a recipe that bakes the eggplant instead of sautéing it in oil and is made as individual servings smothered with red sauce and lots of mozzarella cheese.


2 tablespoons Pizza Seasoning
2 medium eggplant, cut into rounds
1 tablespoon + 1 teaspoon kosher salt, divided
3 cups panko bread crumbs
2 cup parmesan cheese, grated
3 eggs, lightly beaten
2 cups red sauce
2 cups mozzarella cheese, grated

1. Preheat oven to 400°F. Line a sheet pan with parchment paper. Set aside.
2. For the eggplant (this step is optional, leave it out if you have limited time): Arrange the eggplant rounds in a single layer on 2 baking sheets. Sprinkle with 1 tablespoon salt on both sides of each slice and allow it to sit for 30 minutes to 1 hour. Salting it draws out the liquid and bitter flavor. After an hour, rinse with cold water and dry them thoroughly with a kitchen towel.
3. In a bowl mix the bread crumbs, parmesan cheese, Pizza Seasoning and remaining 1 teaspoon kosher salt.
4. Dredge the eggplant discs into the beaten eggs and then into the panko mixture. Place onto the prepared pan.
5. Bake for 20 minutes.Flip the eggplant discs over and coat with red sauce.
6. Top with mozzarella cheese. Bake for 10 minutes or until the cheese is melted and golden brown. Serve warm.

Recipe Tip:
To make this recipe family style -arrange the baked eggplant rounds in a 9x12 inch baking dish with 1/4 of red sauce on the bottom to prevent sticking. Then follow recipe.
