Eggplant Parmesan Pizza

Eggplant is a delicious and healthy alternative to traditional pizza crust.   Add some of your favorite pizza toppings to this quick and easy recipe and you may even be able to convince some of those picky eaters to give eggplant a try.

  • 1 firm eggplant cut into discs
  • 2 cups panko bread crumbs
  • 1 cup parmesan cheese
  • 1 teaspoon salt
  • 2 tablespoons Victoria Taylor’s Pizza Seasoning
  • 3 eggs, beaten
  • 8 ounces red sauce, homemade or store bought.
  • 2 cups grated mozzarella cheese or sliced fresh

Preheat Oven to 400° Salt the Eggplant discs and drain in strainer for 30 min.  Rinse and place on a towel to dry.  Beat eggs in a bowl.  Mix the bread crumbs, grated parmesan, Pizza Seasoning, and salt on a sheet pan or in a plastic bag.  Coat the dry eggplant discs with egg and then dredge in the crumb mixture.  Place on an oiled or sprayed sheet pan. Bake for 20 minutes.  Turn over, coat with a heaping spoon full of red sauce.  Top with cheese and a sprinkle of Pizza Seasoning (optional).  Bake another 10 minutes or until the cheese is melted and beginning to brown. Serve as a side dish or as a Vegetarian Entrée. Best, Victoria
