2 tablespoons Texas Red Seasoning
1 pound ground meat (beef, turkey, chicken)
1 green pepper, chopped
1 yellow onion, chopped
1 - 28 ounce can strained tomatoes
1 cup uncooked rice
1 can red kidney beans, drained and rinsed
4 ounces Monterey Jack cheese, shredded

1. Preheat oven 350ºF.
2. In a large oven proof skillet over medium heat, brown the ground beef. Drain off excess fat and transfer to a bowl. Set aside.
3. In the same skillet over medium heat, add the peppers and onions. Sauté until tender about 6-8 minutes. Add in the reserved ground beef, tomatoes, Texas Red seassoning and rice. Bring to a boil then, reduce heat to a simmer. Cook for 15 minutes, stirring occasionally.
4. Stir in the beans. Transfer skiller to the oven and bake for 25 minutes.
5. Remove from oven, top with cheese and then return to oven. Bake uncovered for 8-10 minutes. until cheese is melted. Let rest 5 -10 minutes before serving.
