2. Place the bread directly on the oven rack and bake for 5-10 minutes or until crisp.
3. In a large a bowl combine the cucumber, lettuce, tomatoes, and parsley.
4. In a small bowl whisk together lemon juice, salt and pepper, and Za’atar. While whisking slowly drizzle in the olive oil. Drizzle over the lettuce mixture, tossing to coat.
5. Tear bread into bite size pieces, add to salad and toss. Serve immediately.
