Ginger Apple Cake

In this recipe fresh apples and candied ginger are sandwiched between two layers of moist cake with a spiced sugar coating on top. This delicious cake is sure to disappear quickly when served to any crowd.

For this recipe you will need:

  • 1 ½ cups unsalted butter, at room temperature
  • 1 ½ cups sugar
  • 2 eggs
  • 1 tablespoon pure Vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 tablespoon Victoria Taylor’s Pie Spices
  • 1/3 cup sour cream or yogurt


  • 3-4 macintosh or pink lady apples, peeled, cored and sliced thin ( approx. 2 cups)
  • 5 tablespoons sugar
  • 5 tablespoons brown sugar
  • 1 tablespoon Victoria Taylor’s Pie Spices
  • ¼ teaspoon Salt
  • 1 teaspoon cornstarch or coconut flour
  • 1 cup roasted almonds
  • ½ cup candied ginger

Gluten Free Option- Substitute gluten-free flour and 1 teaspoon of xanthan gum for all purpose flour. Pre-heat oven to 350°.  Cream butter and sugar until the mixture is light and fluffy.  Add eggs and vanilla. Combine dry ingredients in bowl and then add to butter mixture.  Add sour cream or yogurt.  Beat batter well until it thickens up and becomes a bit elastic.  Set aside. Mix apples, sugar, Pie Spices, salt, cornstarch, almonds and ginger together.  Spread out ½ of the cake batter in buttered 9x13 baking dish.  Spread apples and ginger with some of the sugary good stuff evenly over the batter.  Cover with remaining batter.  Put the reserved sugary good stuff on top. Bake for 45 to 60 minutes until the center comes clean.  Watch it towards the end so that the topping does not burn or get too dark. Serve with ice cream or yogurt. Best,                 Victoria
