Granola with Apple Pie Spice
I have always made my own granola - but it took me years to perfect this recipe. It is not too sweet and it is filled with fruit and nuts. But most importantly has crunchy clusters, my favorite.
Ingredients
1 1/2 tablespoons Apple Pie Spice
3 cups steel cut oats (not quick cooking)
1 cup unsweetened coconut
1/4 cup wheat germ
1 1/2 cups nuts, chopped (I like a mix of walnuts, hazelnuts and almonds)
2 tablespoons canola oil
1/2 cup maple syrup or honey
1/2 teaspoon salt
2 egg whites
1 1/2 cups dried fruit (I like a mix of cranberries, cherries, dates and figs)

Directions
1. Pre-heat oven to 300°F. Line a rimmed cookie sheet with parchment paper. Set aside.
2. In a large bowl combine, all the ingredients except for egg whites and dried fruit.
3. Whisk egg whites till frothy.
4. Add egg whites to oat mixture. Spread evenly on the prepared pan. Cook for 30 minutes.
5. Stir granola so all is toasted. Cook another 20 - 30 minutes or until golden brown and crisp.
6. Cool completely.
7. Mix in dried fruits. Store in an airtight container for 2 months.
