1 cup canola oil
1 cup flour
1 teaspoon baking powder
2 eggs
1 ½ pounds haddock or cod fillets
Salt & pepper
Lemon wedges for garnish

1. Add the oil to a 12 inch cast iron or non-stick skillet over medium-high heat, about 350ºF.
2. Add the Mediterranean Seasoning into a shallow bowl (I prefer a pie plate).
3. In a second shallow bowl add the flour and baking powder. Mix thoroughly.
4. In a third shallow bowl add the eggs and lightly beat.
5. Dip the fillets into the Mediterranean Seasoning, the egg and finally into the flour mixture. Carefully lay the fillets into the hot oil. Cook 5 to 7 minutes or until edges are golden brown.
6. Flip the fillets and cook 3 to 4 minutes on the other side.
7. Remove the fillets to a paper-towel lined plate to collect the extra oil and season with salt and pepper white the fish is still hot. Garnish with lemon wedges.
