Grilled Swordfish with Smoky Paprika Chipotle

The smoky mesquite essence pairs perfectly with this steak-like fish. This is my ideal meal on a warm summer night. If you cannot find swordish, this recipe is also fabulous with halibut. 


4 swordfish steaks (6 – 8 ounces per person)
3/4 cup mayonnaise

1. Preheat outdoor grill to medium-high heat.
2. In a medium bow mix together mayonnaise and Smoky Paprika Chipotle.
3. Spread half the smoky paprika mixture one side of the swordfish steaks -place coated side down on the grill. Spread the remaining smoky paprika mixture on the other side of the swordfish.
4. Cook 5-6 minutes per side, or until just cooked through.
5. Garnish with a lemon wedge. Serve with a green salad.

Recipe Tip:
I suggest oiling your grill to ensure the swordfish does not stick. Preheat grill to 500º. Dip a folded paper towel into vegetable oil and with tongs lightly coat grill grates.
