Grilled vegetables are often overlooked as a delicious addition to a meal. This recipe could not get any easier. When served family style this makes a stunning presentation.


1/4 cup olive oil
2 teaspoons Dijon mustard
1 bunch asparagus, trimmed
1 pound cherry tomatoes
6 carrots, sliced lengthwise
1 yellow squash, cut into 1/2 inch slices
1 zucchini, cut into 1/2 inch slices
1 red onion, cut into wedges

1. In a large bowl, whisk together the olive oil, Dijon mustard and Cracked Black Pepper Rub (or Pepper Garlic Grilled Vegetable Seasoning).
2. Add in the prepared vegetables, tossing to coat.
3. Prepare grill to medium-high heat. Grill veggies turning occasionally until lightly charred, about 10-12 minutes.
