This is a great dish to serve at brunch or to bring to a potluck dinner as it can be served hot, cold or at room temperature. There are plenty of ways you can mix up the ingredients to suit your taste. You can stick with white or brown rice or substitute another grain such as farro or quinoa. You could switch out the spinach for broccoli or asparagus and use feta or cheddar cheese instead of parmesan and top with thinly sliced tomatoes. Whichever way you decide to make this dish you won’t go wrong as long as my favorite Sicilian Seasoning is in the mix.
Preheat oven to 350°
Cook the spinach using the package directions, then drain well. Mix the spinach and remaining ingredients in a bowl. Spoon into a 2 quart baking dish. Bake for 30 minutes. Cut into squares to serve. For any leftovers, wrap individual servings in plastic wrap and re-heat them (wrapped) in the microwave until warm. Best, Victoria
