Jalapeño Cornbread Muffins

These cornbread muffins make an ideal accompaniment for chili, bbq and soup.  



1 egg
1/3 cup milk
1 pkg. corn muffin mix (8.5oz)
1 - 8.5oz can creamy corn
1/2 cup cheddar cheese, grated
1/4 cup green onions, chopped

1. Preheat oven to 400°. Grease a muffin pan or line with paper liners. Set aside.
2. In a large bowl whisk the egg and the milk. Add the corn muffin mix, creamy corn, cheese, green onions and Jalapeno Pepper Flakes. Mix until just blended.
3. Spoon the cornbread mixture into the prepared pan.
4. Cook for approximately 12-15 minutes until tops are golden brown and a toothpick inserted into the center comes out clean.
