Lamb burgers are reminiscent of a spit grilled Greek gyro. I love these burgers on toasted brioche buns, tzatziki and pickled red onions. Delicious!

3 tablespoons olive oil
1/2 cup onion, minced
24 ounces ground lamb
4 teaspoons Dijon mustard
3 cloves garlic, minced
Salt and Pepper to taste
