The test kitchen prepares for Thanksgiving throughout the months of May and June. Leftovers are repurposed to create and test new recipes. For this waffle recipe we used leftover mashed potatoes. However, these waffles were so highly regarded by our panel of taste testers, we included it on our online library, permanently. 


2 large yukon gold potatoes, peeled and cut into 8 pieces
2 tablespoons unsalted butter
5 tablespoons milk, divided
2 large eggs
3 tablespoons chives, finely diced
1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper

1. Add potatoes to a large pot of salted boiling water. Bring back to a boil, then simmer uncovered for 10-12 minutes or until potatoes are fork tender.
2. Drain. Add 2 tablespoons of butter. Cover for 2 minutes. With a potato masher or hand-held mixer slowly break up the potatoes. Stir in 2 tablespoons milk and the Herb Brown Butter Mash Potato Seasoning. Blend until creamy.
3. In a large bowl whisk the remaining 3 tablespoons milk and the eggs until well combined. Fold in the mashed potatoes, chives, flour, baking powder, baking soda, salt and pepper. Mix until just combined.
4. Heat the waffle iron and grease if necessary.
5. Add 1/4 -1/3 cup of batter into the waffle iron. Cook until golden brown. Serve hot with maple syrup.
