The test kitchen prepares for Thanksgiving throughout the months of May and June. Leftovers are repurposed to create and test new recipes. For this waffle recipe we used leftover mashed potatoes. However, these waffles were so highly regarded by our panel of taste testers, we included it on our online library, permanently. 


2 large eggs
3 tablespoons milk
1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
4 cups left over mashed potatoes or mashed sweet potatoes
3 tablespoons chives, finely diced

1. In a large bowl whisk the eggs and milk.
2. Whisk in the flour, baking powder and baking soda until just combined. Fold in the mashed potatoes and chives with a spatula.
3. Heat the waffle iron and grease if necessary.
4. Add 1/4 -1/3 cup of batter into the waffle iron. Cook until golden brown. Serve hot with maple syrup.

Recipe Tip:
Add more milk, a tablespoon at a time if your batter is too thick. Salt and pepper are not included in the recipe as mashed potatoes are usually very well seasoned.
