1. Preheat oven to 425°. Lighly grease a baking pan or oven safe dish. Set aside.
2. Rinse the fillets under cool water and pat dry with a paper towel.
3. Generously coat half the lemon slices with Seafood Seasoning. Fold each fillet in half and place a Seasoned lemon slice inside each fillet like a sandwich.
4. Top each folded fillet with a plain slice of lemon, and dot with butter.
5. Bake for 15 minutes until fish is flaky throughout.
