The feta cheese, Mediterranean Seasoning and kalamata olive topping on this flaky pastry is extremely addictive. As I was eating this I kept thinking of all of the other applications I could use it for. It would be great baked over chicken, topping a salad or spread on crackers and pita bread. But I must say it was exceptionally good over sliced ripe tomatoes that had sunk into the center of buttery puff pastry as in this recipe. For this recipe you will need:
Preheat oven to 400° Place thawed pastry sheets on a lightly floured surface. Pierce the pastry all over with a fork. Mix together olives, feta cheese, Mediterranean Seasoning and olive oil. Cut each pastry sheet into 9 squares. Place each square on a parchment covered baking sheet. Top each pastry with one or two sliced tomatoes each. Drop a spoonful of olive and feta mixture over the tomatoes. Bake for 15 minutes until pastry is puffed and golden. Best, Victoria
