4 tablespoons Seafood Seasoning
1/2 panko breadcrumbs
4- 6 ounce cod fillets, or other similar white fish such as haddock or tilapia
4 tablespoons mayonnaise, optional
2 teaspoons unsalted butter
1 lemon cut into wedges

1. Preheat oven to 350º F. Line a rimmed baking sheet with aluminum foil. Set aside.
2. Combine the Seafood Seasoning with panko breadcrumbs in a bowl and mix well.
3. If using, spread 1 tablespoon mayonnaise on each fillet. Dredge each the fillets with the breadcrumb mixture. Arrange on the prepared pan.
4. Top each fillet with 1/2 teaspoon butter. Bake for 12-15 minutes or until the fillets are golden brown. Serve with lemon wedges.
