Popeye and Olive Oil Go to Tuscany

This is a perfect last minute recipe as I almost always have all these ingredients on hand.  The flavors of toasted sesame, citrus and rosemary really stand out among the simple ingredients in this dish. 

1 pound penne or bowtie pasta
1 medium onion, chopped
1 box frozen spinach, cooked or 1pound cooked fresh spinach
3 tablespoons olive oil
1 15 ounce can diced tomatoes
2 tablespoons Victoria Taylor’s Tuscan Seasoning
shredded mozzarella and parmesan cheese for garnish

Cook the pasta and spinach according to package directions. Meanwhile sauté the chopped onion in olive oil for about 5 minutes.  Add the diced tomatoes and Tuscan Seasoning and sauté for another 3 minutes. When the pasta is done, toss with the onions, tomatoes and cooked spinach.

Sprinkle with shredded mozzarella and parmesan cheese to serve.
