Pork tenderloin is a staple at my house. This recipe offers a crunch and a nutty flavor complementing the earthiness of the pork and sweetness of the apples and potatoes. 


4 tablespoons 7 Seed Crust
1 pound pork tenderloin (usually 1 tenderloin)
2 medium Braeburn or Macoun apples, cored and cut crosswise
2 large sweet potatoes, peeled, cut into 1 inch pieces
1 large yellow onion, cut into 1 inch pieces
3 tablespoons olive oil

1. Preheat oven to 425F°.
2. Rub 2 tablespoons of the 7 Seed Crust onto the pork tenderloin.
3. Place the pork onto a roasting pan.
4. Combine the olive oil and remaining 2 tablespoon 7 Seed Crust, apples, sweet potatoes and onions; toss to coat. Add to the roasting pan around the pork tenderloin.
5. Bake for 20-30 minutes or until pork reaches internal temperature of 135Fº.
6. Remove the pan from the oven, transfer the pork to a cutting board, tent with foil and rest for 10 minutes. Serve warm.
