These potato puffs are my secret to making dinner look gourmet. Just don't tell your family and friends how easy they are to make!


3 tablespoons Honey Aleppo Pepper
3 cups mashed potatoes
2 eggs, lightly beaten
1/3 cup sour cream
2 tablespoons parmesan cheese, grated
1 cup sharp cheddar cheese, shredded and divided
2 tablespoons parsley, chopped

1. Preheat oven to 400°. Lightly grease a muffin pan with cooking spray. Set aside.
2. In a medium bowl, mix the mashed potatoes, sour cream, eggs, parmesan and 1/2 cup cheddar cheese, parsley and Honey Aleppo Pepper.
3. Spoon mixture into the prepared muffins tin and sprinkle with remaining 1/2 cup of cheddar cheese.
4. Bake for 25-35 minutes or until the edges are brown and pulling away from the side of the pan.
5. Let cool for 5 minutes before removing from the pan. Serve warm.
