1. Place the egg in a food processor and pulse until smooth.Add the vinegar and Mediterranean seasoning to the egg, pulsing to combine.
2. With the food processor or blender running, gradually add in the olive oil. Season to taste with salt and pepper.
3. Refrigerate in an airtight container for up to 3 days.

This dressing makes the salad!. The garlic in the recipe actually comes from the Mediterranean seasoning. If you prefer additional garlic flavor, add a clove of fresh minced garlic.
