A colorful, soul warming and hearty side dish for cooler months. The sweetness of the roasted vegetables is a great match for the Savory Honey Vegetable Glaze.  


3 pounds root vegetables (carrots, parsnips, potatoes, sweet potatoes)
6 tablespoons butter, melted
2 teaspoons kosher salt
1 ½ cups vegetable stock

1. Preheat oven to 350ºF. Line a rimmed baking sheet with foil. Set aside.
2. Peel and cut vegetables into 1 inch cubes. Add to a bowl with butter, salt and Savory Honey Vegetable Glaze. Toss to coat.
3. Arrange on the prepared pan. Cover tightly with foil. Bake for 40 minutes.
4. Remove foil, pour stock over vegetables. Increase oven 500°F. Bake for 15 minutes or until vegetables are tender and stock is absorbed.
