Scallops with Curry Sauce

Scallops are simply delicious - Oh and incredibly quick and easy to prepare. Curry is a perfect compliment to the tenderness of scallops.


2 teaspoons Curry Seasoning
½ cup plain yogurt
1 tablespoon apple jelly
1 tablespoon brown sugar
1 tablespoon lime juice
salt to taste
1 pound fresh sea scallops
1 tablespoons olive oil

1. Mix together the first 5 ingredients. Season with salt to taste. Refrigerate until needed.
2. Heat a skillet over high heat (we prefer our seasoned cast iron) over high heat. Add oil. Sear scallops on each side for about 3 minutes or until brown.Scallops will split and will look opaque.
3. Remove the prepared sauce from refrigerator, spoon on plate, and serve scallops on top of the sauce.
