Pork tenderloin is a canvas for flavor. Pungent ginger and bright citrus infuse lean tenderloin with intensity of flavor. The tender sweet potatoes and caramelized red onions round out this yummy one-pan wonder.
2. On a rimmed sheet pan add the sweet potatoes, red onion, olive oil, 1 teaspoon salt, 1/2 teaspoon black pepper and 1 tablespoon Ginger Citrus seasoning. Toss to coat. Roast for 15 minutes or until the sweet potatoes are almost tender.
3. Reduce oven temperature to 350°F..
4. Place the pork on top of the sweet potatoes. Drizzle the tenderloins with the orange juice and then season with the remaining teaspoon of salt, 1/2 teaspoon pepper and tablespoon of Ginger Citrus seasoning. Return to oven and roast for 20-25 minutes or until the internal temperature of the pork is 145°F.
5. Set oven to broil. Broil pork for 3-4 minutes or until it is brown and crusty. Rest 5 minutes before slicing.
