Sweet potatoes are one of my favorite foods. The tender and sweet flesh is slow roasted and then topped with a Moroccan infused medley of texture and colors.

1/2 apple, diced
4 garlic cloves, minced

2 teaspoons maple syrup
1/2 cup cilantro, chopped
2 scallions, diced
