I like cheese in almost everything - my spicy cornbread is no exception. This cornbread is perfect as a side for any protein or a bowl of chili.


2 ears of corn, kernels cut off, or 1 cup frozen corn
1 cup all purpose flour
1 cup cornmeal
3 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup buttermilk
2 eggs, lightly beaten
2 tablespoons butter, melted
2 tablespoons vegetable oil
1 cup extra sharp cheddar cheese, shredded

1. Grease a 9x9 inch square or a 9 inch round baking pan. Preheat oven to 400 degrees.
2. Mix dry ingredients in a bowl with Victoria Taylor's New Orleans Seasoning. Set aside.
3. Wisk together all the wet ingredients in a small bowl. Combine with the dry mixture and stir until just moistened. Stir in the corn and cheese. Pour batter into prepared pan.
4. Bake for 20-25 minutes or until edges are golden and a wooden toothpick insterted in the center comes out clean. Cool slightly and serve warm.
