This is my favorite corn salad- it has a sweetness from the corn and a spicy kick from the cajun seasoning. 


1 teaspoon kosher salt
10 ears of corn, husks and silks removed
2 tablespoons olive oil
1 large onion, finely chopped
3 cloves garlic, minced
1 small jalapeno pepper, finely diced
1 large red, orange or yellow bell pepper, 1/2 inch diced
1 large tomato, seeded, diced

1. Bring a large pot of water to a strong boil.
2. Add the salt and corn. Return water to a boil and cook corn for 8 minutes. Rinse the cooked corn in cold water to cool and slice the corn from the cobs.
3. In a large skillet over medium- high heat, add the olive oil onion and garlic -sauté for 5 minutes.
4. Stir in the New Orleans seasoning, jalapeno pepper, bell pepper, and corn to the saute pan. Cook for 3 minutes.
5. Add the chopped tomato and sauté for 1 minute. Refrigerate 1 hour or until chilled. Serve cold.
