1. Preheat oven to 400 degrees. Line 2 sheet pans with parchment paper.
2. Peel and cut the sweet potatoes into thin long strips.
3. Place all ingredients in a large mixing bowl or ziplock plastic bag and toss until the potatoes are completely coated.
4. Place potatoes on the prepared baking sheets, being careful to not overlap. Bake fries for 45-60 minutes or until golden brown, stirring occasionally. Salt to taste.
