Roast chicken is one of my favorite dishes to make. My Tuscan Chicken seasoning combines garlic, bell pepper, and green onion, along with herbs and spices and aromatic oils, to set off the flavor of roast chicken perfectly. It will fill your kitchen with flavor. With my recipe the flavor of the seasoning and fresh lemon taste permeates the chicken.
Start by preheating your oven to 425 degrees. Take a four to five-pound roasting chicken and wash it inside and out, patting it dry with paper towels.
Using your fingers, loosen the skin from the breast and rub olive oil under the skin and all over the chicken. Cut a lemon into quarters and place them inside the chicken cavity.
Then place the chicken in a roasting pan, breast side up. Rub the Tuscan Chicken seasoning all over the chicken, inside and out, including under the skin. Salt to taste inside and out.
Place a sheet of foil loosely over the chicken and roast for 30 minutes. Remove the foil and roast for an additional 30 to 45 minutes, or until the chicken reaches an internal temperature of 160 degrees.
