3 tablespoons olive oil
2 tablespoons fresh lemon juice
4 tomatoes, cut in wedges
1 green cucumber, thinly sliced
1 green pepper, cut in half rings
1 red onion, thinly sliced
1/2 cup kalamata olives
1 tablespoon capers, rinsed
1/2 cup pepperoncini
8 ounces feta cheese, cubed

1. In a small bowl, whisk together olive oil, Mediterranean and fresh lemon juice.
2. In a large bowl add all of the chopped vegetables, olives, capers, pepperoncini peppers and feta cheese.
3. Pour olive oil mixture over the vegetables and toss well to incorporate.
4. Season with salt and pepper.
