Wheat Berry Salad with Ginger Citrus

Ingredients

2 cups wheat berries
2 tablespoons lemon juice
2 tablespoons white vine, white or cider vinegar
2 teaspoons Dijon mustard
1 tablespoon honey
1/2 cup extra virgin olive oil
2 shallots, minced
1/2 cup grape or cherry tomatoes, halved
1 - 15 ounce can white beans, drained and rinsed
1/2 cup scallions, finely chopped
1/2 cup feta cheese, crumbled

Directions

1. Bring a large pot of salted water to a boil. Stir in the wheat berries and cook for 10-12 minutes or until al dente. Drain. Cover for 10 minutes to steam.
2. Meanwhile, in a large mixing bowl combine the lemon juice, vinegar, Dijon mustard, honey, olive oil and Ginger Citrus. Whisk to combine.
3. Stir in the shallots, wheat berries, tomatoes, beans, scallions and feta cheese. Season to taste with salt and pepper. Serve or chill until ready to serve.
