This healthy and delicious salad provides tons of ginger- garlic-sesame flavor, color and incredible texture.
Ingredients
1 rotisserie chicken
1/4 cup toasted sesame oil
2 cloves garlic, minced
1/2 cup sliced almonds
Juice from 1 lemon (about 2 tablespoons)
2 tablespoons white wine vinegar
2 tablespoons soy sauce
1 cup red cabbage, chopped
2 cups broccoli slaw
1 bunch scallions, thinly sliced

2 tablespoons Toasted Sesame Ginger

Directions
Remove the skin from the chicken. Chop the chicken into bite size pieces. Place in a large bowl.
In a small sauté pan over medium heat add the sesame oil and garlic, cook for 2 minutes. Add Toasted Sesame Ginger and the almonds. Cook for 2-3 minutes or until the oil in the pan starts to turn light brown and is fragrant.
Remove from heat and stir in the lemon juice, vinegar and soy sauce. Add almond mixture to the chicken and toss to coat.
Add red cabbage, broccoli slaw and scallions to chicken mixture. Mix well. Serve warm or chilled
