Ingredients
2 packages ramen noodles (discard flavor packets)
1 bag broccoli slaw
2 bunches scallions, finely chopped
1 cup edamame, shelled
1 cup sliced almonds, toasted
1 cup sunflower seeds, shelled, roasted, salted
1/2 cup toasted sesame oil
3/4 cup unseasoned rice wine vinegar
2 tablespoons sugar

2 tablespoons Toasted Sesame Ginger

Directions
Put the ramen noodles into a zip-top bag and crush coarsely with a rolling pin or heavy pan.
In a large bowl combine the crushed noodles, broccoli slaw, scallions, edamame, almonds, sunflower seeds, and Toasted Sesame Ginger seasoning.
In a small bowl whisk together the sesame oil, vinegar and sugar. Pour the vinaigrette over the slaw, tossing to coat. Serve immediately.
Recipe Note
To make ahead add all of the slaw ingredients except for the noodles in your serving bowl. Toss with the vinaigrette just before serving.
