2/3 cup Blackening Rub
6 boneless skinless chicken breasts
2 tablespoons canola oil
6 lime wedges
Preheat oven to 350ºF.
In a shallow bowl, add the Blackening Rub. Dredge the chicken into the rub covering both sides.
Heat a large cast iron or oven-safe skillet over medium-high heat. Add oil and when almost smoking add the chicken and cook until browned, about 4 minutes on each side. Transfer skillet to the oven to finish cooking chicken for 10 minutes or until internal temperature reaches 160ºF.
Serve warm with a lime wedge.
For a super quick dinner - use chicken thin sliced chicken breasts or cutlets. Pan sear each side for 3-4 minutes.
